Better pic this time. Mmmmm
This salad was even better the next day! I was inspired by Charlie at SweetSaltySpicy blog and wanted to make it right away. I had most ingredients on hand, so I halved her recipe and then twisted it. YUM!
i used
1 portion size each of brown rice couscous & whole wheat couscous (should have done two pots cause the cooking instructions are diff, but it turned out ok, as long as I simmered it about 5 min more than the wheat said to-in order to get the rice one cooked) using part water and part Cranberry Spiced cider from TJ's. That gives the couscous a little bit of flavor.
Then I diced up (stickily I might add) 2 Medjool dates
Peeled two Moro Blood oranges and sliced up some fennel bulb.
Once the couscous was done I combined those items with some hand crunched walnuts (just a small handful of halves) and about 2 tbsp of oil (evoo & ginger grapeseed) with a healthy portion of blood orange balsamic vinegar. I gave the entire mixture a good shake of sea salt, some ground grains of paradise aka alligator pepper, and cardamom.
i tore up some leaves of organic butter lettuce (about 4 of them) and sprinkled the dish with some hemp seeds for more protein power.
i ate some before heading out to the Kris Carr Crazy Sexy Diet book signing in Oakbrook at Borders and the rest is lunch today and either dinner tonight or lunch tomorrow. If you have some and choose to add it, this would be awesome with some feta cheese on top too. mmmm
